Aristotelis ke Anthoula White-ish 2024

One of our favourite releases – White-ish is our white wine that gets a little bit of added texture and complexity from a brief skin fermentation and oxidative maturation in stone amphora.

The result is a refreshing, zingy light skinsy wine that looks like a dream and is an absolute delight to drink. On the nose it’s floral and fruity, with notes of green pineapple and lime leaf, followed by a super complex and balanced palate, full of nuance from the subtle oxidative notes.

We have used Fiano from various vineyards for
a few years now, from Hilltops to Riverland to Gundagai. We love the savoury mineral edge the ancient volcanic soils, as well as the climate of Gundagai, bring to this wine.

The vinification is a combination of directly pressed fruit and destemmed fruit that was gently basket pressed to amphora after a few days.
